Charred Pineapple Salsa
0.25 cup Piña Reàl
4 slices fresh pineapple
Juice of 1 lime
2 fresh jalapeño peppers, diced
2 tomatoes, diced
2 Tablespoons diced red onion
1/2 cup chopped fresh cilantro
1 teaspoon salt
Grill pineapple slices for 3 minutes on a hot grill or cast iron pan.
Core and dice pineapple slices, then mix all ingredients together.
Serve with spicy grilled shrimp or coconut shrimp, or sesame-soy salmon or chicken.
