
Crispy Brussels Sprouts
1 container Juicy Pear Reàl
4 pears peeled, cored and 1/2 inch dice.
2 T chipotle puréed
1 pinch salt
1 cup bourbon
1/2 cup cooked and chopped bacon
1-2 lbs Fresh Brussels Sprouts halved
1 Red Onion, julienned
Balsamic Onions:
1 cup balsamic vinegar brought to a boil, simmer for 5 minutes, pour over 1 julienned red onion, refrigerate
Brussels Sprouts:
Fry brussels sprouts at 350F for 3 minutes, then add to a mixing bowl with all ingredients, and 1/2 cup of chutney and toss.
Add to individual plates or large serving platters, drizzle with more chutney on top and around plate.
